Well, hey there anon. I’m a bit intrigued as to how you know about my bomb ass oatmeal since my tumblr and instagram don’t have a whole lot of over lap. Nonetheless, I am glad you reached out because this is a very important question.
Pumpkin Pie Oatmeal recipe (sorta) that I stole from a myriad of food blogs:
About 1/3 cup of plain rolled oats, 4 big spoonfuls of pumpkin puree, about a tbsp of pumpkin pie spice (nutmeg, cinnamon, and ginger), tbsp chia seeds, a pinch of vanilla extract and sea salt, toppings: earth balance, maple syrup, and Purely Elizabeth pumpkin seed granola.
cook oats in a pan with either a cup of water or milk of choice. Cook until water/milk is absorbed (about 5 min). Stir in pumpkin puree and chia seeds. Cook for a few more minutes. Stir in spices, vanilla and sea salt. (you can also add in the maple syrup now if you wish as well) once everything is nice, hot, and mixed, pour into a bowl. Add on top a nice hefty spoonful of earth balance (or regular butter) top with granola clusters and drizzle on some (or extra) maple syrup.
Pair with coffee or tea and enjoy your fall-induced coma.
